Skaggmo's Fajita's...

Everyone loves homemade fajitas cooked on the grill outside in the summertime. Oh yeah, I can smell them now, leaving a sweet aroma throughout the whole neighborhood. Here's my personal recipe-

2 pounds of skirt steak
10  fresh limes
cilantro
flour and corn tortilla's
onions
tomatoes
green peppers
pico de gallo
jalepeno peppers
Corona Beer

Give all of your guests a Corona with a lime-quarter shoved in the top, then spark up the grill. As the coals are getting hot, wrap the grill rack in foil and poke some holes in it with a fork. Poke as many holes as you can, but remember to keep them small enough so that your steak strips can't fall through.

Cut the skirt steak into quarter inch strips, about two inches long. Chop the green peppers and onions in similar strips. You'll need about the same amount of peppers and onions as there is steak. Squeeze lime juice on the peppers and onions and wrap it into two foil balls and sit it to the side.

Make some pico de gallo- finely chop one large tomato, one jalepeno, a small onion and a handful of cilantro. Place it in a bowl for your guests to use as needed. Cut the limes into quarters and place in a bowl. Pick a bunch of cilantro leaves off and put them in a bowl.

Sit the foil balls (peppers and onions) on the grill in the corners and cook the steak on the grill, turning once or twice. When the steak is nearly done, cover it with totillas.

Offer everyone another Corona and fiesta baby!
